Chapter 7. EATING AND DRINKING ESTABLISHMENTS |
§ 6:608. General regulations.
In addition to the provisions of Chapters VII and XXI of the state sanitary code, all business regulated by this chapter shall conform to the following regulations:
(1)
Plans for all new establishments and those being altered or reconstructed, shall be submitted to the director and certified by him in writing, either by letter or by signing the plans, as complying with all the requirements of this chapter prior to the start of any construction or repair work.
(2)
In accordance with the applicable provisions of the building code, adequate and conveniently located toilet facilities shall be installed for the use of employees. Establishments selling alcoholic beverages for consumption on the premises shall also install adequate toilet facilities for the use of patrons. All plumbing shall conform to the applicable provisions of the plumbing code of the parish and the regulations of the state. If a septic tank system is provided, the system shall be located so as to prevent traffic, parking or paving over the area. Any such system shall include both primary and secondary treatment of all waste from the establishment.
(3)
All waste drains from refrigerators, ice boxes, ice bins, refrigeration coils, extractors, steam tables, coffee urns and similar equipment shall be indirectly connected to the sewerage system or discharged indirectly into a receptor with the waste outlet discharging at least two (2) inches above the rim of the receptor.
(4)
All ventilating fans or ventilation ducts leading to the outside of the establishment shall be equipped with screens or self-closing louvers.
(5)
All garbage or refuse of any type that may be attractive to insects or rodents shall be stored in such a manner as to exclude insects and rodents. Garbage, refuse and debris shall not be allowed to accumulate on the premises.
(6)
No operation of any business regulated by this chapter shall be conducted in any room or place used as living or sleeping quarters; nor shall there be a direct opening between a room or place used as a kitchen or for the preparation of food, with living or sleeping quarters.
(7)
Single service utensils shall be stored in original containers and in an approved manner. Such utensils shall be individually wrapped or dispensed from the original container or a sanitary dispenser.
